I hate big carrots, I don't even like baby carrots, but some recipes require them, such as my meatball sauce. Carrots also come in GIANT bags, so after I use one for a recipe, I'm left with 56 carrots that I don't want to eat. The best way to get rid of these is to make carrot soup. They don't even taste like carrots after I'm done with them.
I used this recipe
but I added
- 2 tsp fresh ginger
- 1/3 cup more white wine to the broth
I used chicken broth instead of vegetable broth and skipped the cream.
